    My late father told me the toughness can largely be tenderized by boiling it for like an hour, then beating it with a meat tenderizer, before the actual final cooking on the grill/stove/oven/fryer.

    I was once given a piece of fully cooked, but not boiled in advance, wild boar meat, about the size of a McDonald’s chicken nugget. It was so damn tough that it literally took me over an hour to chew and swallow.

    • Yes the flavours may bit a bit more, but here in NZ our beef is generally outside all year and grass fed so tends to be richer/stronger than some meat that I’ve had overseas.

      And like any meat, treat it well to get the most out of it
